6 Creative Ways to Use Strawberries This Summer

July is just around the corner and with it comes the awaited fresh strawberry season. Besides just eating them fresh there are many other wonderful ways to enjoy them!

Strawberries and Cream Smoothie

A healthier strawberry milkshake!

Tastes like a strawberry milkshake but a whole lot healthier! It only takes a minute to make and even less time to drink up.

Mix 1 and a half cups of strawberries in a blender with milk or cream. You might need to add a little sweetener of choice: sugar, stevia, honey, etc.

Strawberries and Oatmeal Dessert

This baked dish makes a lovely dessert or can be enjoyed for a weekend brunch.

Start by preheating the oven to 375 degrees F and grease a 2-quart baking dish.

Mix:

  • 2 cups old-fashioned rolled oats
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp orange zest
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1/2 cup chopped walnuts
  • 6 oz. strawberries

Spread the mixture into pan. Sprinkle slices from one banana over everything. In another bowl mix:

  • 1 egg
  • 2 cups milk or nutmilk
  • 3 tblsp melted butter
  • 2 tsp vanilla extract

Pour this mixture over the oatmeal and fruit.  Bake for about 35 minutes until the top is set. For an extra crispy topping, sprinkle a tablespoon or so of brown sugar over the top and return to the oven under the broiler for 20 seconds.

Balsamic Roasted Strawberry Bruschetta

This sweeter take on bruschetta will be hard to resist!

Include strawberries as a topping on your next sandwich!

Roast 1 lb of strawberries, washed and cut into quarters by placing them into an 8 x 8 roasting dish with 1 tbsp of sugar and 4 tablsp of balsamic vinegar and into a 350 degreeF oven for 50 minutes. The strawberries should be soft but not have fallen apart. The balsamic vinegar and sugar will have reduced and will thicken as it stands.  Let cool completely.  Serve strawberries on a toasted baguette topped with ricotta cheese.  The balsamic reduction will just drizzle over. Yum! I could eat these all day.

Strawberry Bacon Brie Sandwich

Whoever thought of making a grilled cheese sandwich with strawberries? What a great idea!

Here’s how to make it:

Melt some butter in a heavy skillet, cast-iron is perfect. Layer 3 slices of crispy cooked bacon, 2 thick slices of brie, 3 large strawberries, slices, on a thick slice of rustic bread, and top with another slice. Grill the sandwich on med. High heat.  Flatten the sandwich as it cooks with another heavy pot or pan. Flip over and cook the other side until nicely toasted. Voila! Strawberry heaven.

Strawberry Mousse

A pillowy light treat that is easy to put together and delicious to eat. Make this ahead on the day you plan to serve it.

Slice 1 lb of washed strawberries into a bowl with 2 tblsp of sugar or other sweetener, and 1 tblsp of Grand Marnier or orange juice. Let it sit for about 30 minutes for the juices to form. Meanwhile whip 1 ½ cups of cream and 2 tblsp powdered sugar until soft peaks form. Puree the strawberries, and then gently fold into the whipped cream. Refrigerate for at least 1 hour.

Serve with a whole strawberry on top.

Strawberry Asparagus Salad

A great pairing of two spring all stars: asparagus and strawberries!

Slice a bunch of asparagus at an angle and blanche by cooking them for about 1 minute and then plunging them into ice water. Mix with 1 pint of washed and slices strawberries, ½ cup of goat cheese crumbled, and ½ cup of toasted sliced almonds. Toast the almonds by spreading them on a cookie sheet and baking in an 170 degreeF oven for 15 minutes.

Make a vinaigrette by combining: 1 minced garlic clove, I tsp Dijon mustard, 6 tblsp of extra-virgin olive oil, and 1 ½ tbsp wine vinegar.

Put the dressing on right before serving and enjoy!
